About Rambal

The Story

Rambal is the project of Narciso Bermejo and Pelayo Escandón. After several years in creative cooking, Narciso set out to make what he calls facsimile cooking: Madrid recipes that were everyday between 1975 and 1986, followed to the letter, with nothing that hasn't been done before. The kitchen leans on named suppliers, from Ávila lettuce and Granada tomatoes to pardina lentils from Castroverde de Campos and chorizo, magro and pancetta from a León butcher in the Alto Órbigo. It holds a Solete in the Guía Repsol.

The Cuisine

Classic Spanish home cooking. At lunch there's one main course for everyone, always a stew, such as lentejas, fabada, potaje with chickpeas and berza, patatas a la riojana or with squid, or menestra in season; there's no cocido. The house salad changes with the season, with bonito escabeche or cured pork jowl.

Lunch: the Menú

The lunch menu brings two aperitivos on aluminium trays, such as roast Lamuyo peppers or chicken-liver pâté with toast, then the house salad, the stew of the day in a tureen to repeat as often as you like, and dessert. Late-2025 reports put it at €25 to €30 on weekdays, with a higher price on Friday and Saturday; check the current price when you book. Drinks and coffee may be extra.

Dinner: the Carta

In the evening Rambal changes the rules and serves à la carte: chard in sauce with eggs, roast leeks with blue cheese, hake in green sauce with chard, setas de Paula, Montes de Toledo rabo de toro and an oven-roasted spring chicken, with mains around €18 to €26. Every wine on the list is available by the glass, from Penedès and Bierzo to Ribeira Sacra, Lanzarote and Mallorca.

Hours

Rambal opens Tuesday to Saturday for lunch (13:30 to 17:00) and dinner (from 20:00, or 20:30 at weekends), and Sunday for lunch only; it closes on Monday.

Checked tablecloths, a water jug, high and low tables crammed into a modest corner room, and old tureens left on the table so you can help yourself. It fills quickly after 14:00, mostly with regulars, and the house has its rules: no videos inside, the lunch main can't be changed, and Narciso comes out mid-service to talk each table through the dish and its suppliers.
