About Piantao Chamberí
The Story
Piantao is a contemporary Argentine parrilla born, in its own words, with all the strength of its origins. The first Piantao is by the Matadero in Legazpi; this Chamberí branch on Calle Sagasta is led by chef Javier Brichetto, bringing classic dishes from the Pampa and flavours from Patagonia to the barrio. The house picks animals of different origins, prioritising how they were raised and fed over breed, and much of its Argentine beef carries the Pampeana seal. It's listed in the Guía Repsol.

The Sagasta Carta
The September 2026 carta opens with house-made charcuterie from Ibérico pork, poultry and European beef: A5 Japanese Wagyu cecina, a grilled Wagyu tongue with carrot escabeche, the house chorizo criollo, Argentine-style fresh morcilla and chistorra. The bread is baked with beef fat and served with chipá and smoked butter. Starters include a smoked-picanha vitello tonnato, a grilled bone-marrow canoe with Amur Osetra caviar, an ojo de bife steak tartare, smoked asado croquetas made without béchamel, 60-day aged provolone from the grill, an XL grilled artichoke with Ibérico papada, milk-marinated Angus sweetbreads and knife-cut ojo de bife empanadas with yasgua sauce. The meat list rates every cut for marbling, flavour and tenderness: Pampa Black Angus picanha, a four-rib ojo de bife and prime Nebraska skirt, a Wagyu vacío and Wangus lomo bajo from Argentina, then aged chops by the kilo, from a 50-day Holstein and a Finnish Ayrshire T-bone to a 60-day Galician Amarela and a German full-blood Wagyu chop at €190 a kilo. Label Rouge chicken and grilled vegetables, such as orange-wood smoked peppers, round it out.
