The Story

Macarena opened on Calle del Rodio in Legazpi in 2017, the first restaurant of what became Grupo Macarena, and the group still calls it its flagship and the place that made it fall for Almadraba red tuna. The kitchen's roots are Andalusian, mixed with international flavours but always with the south as the common thread, and it has become a reference in Madrid for lovers of wild red tuna. It's listed in the Guía Repsol.

The kitchen works from an Andalusian base, built around red tuna and reworked southern classics such as oreja cochifrita and Cordovan aubergines.

What to Order

The tuna is the reason to come, from a smoked tarantelo tartare (tarantelo is a cut from the tuna's lower loin) to the day's cuts. Around it, the carta reworks southern and Madrid classics for sharing: oreja cochifrita served muy brava, Cordovan-style aubergines, a deconstructed croqueta, jigged squid on a plankton risotto, and a burger of retinto beef, the red cattle of Cádiz. Service runs all day from 11:30, so it works for a long lunch, an afternoon on the terrace or a late dinner.

The Grupo Macarena Family

Macarena was the start of a small group, all built on the same southern thread. Azahara on Calle Don Ramón de la Cruz, in the Salamanca district, is billed as Macarena's alter ego, with a hidden corner called Furtivo by Azahara and live tuna-butchery sessions. A few doors down, the group runs Casa Julián, a charcoal-grill house that has been in the neighbourhood since 1977. Marimorena on Calle Embajadores is the most southern and playful take on the Macarena idea, and Jarana sits on the seafront in Barbate, one of the Cádiz towns of the Almadraba fishery.
