The Story

La Cantina is the Matadero Madrid home of Olivia Te Cuida, a project that began in 2009 on Calle Santa Teresa around healthy, organic, seasonal cooking with an international streak, some of it grown in the group's own garden, and a carta designed by Esther Campoy and Brisa Deneumostier. The team calls the Cantina its second home: Matadero had become a hub for Madrid and European culture, and the chance to open there was too good to turn down. The group's site currently lists its other restaurants, Olivia Te Cuida and Olivia Fortuny, as temporarily closed, alongside a take-away and catering arm.

The Cuisine

Home-style, seasonal cooking that leans healthy and organic, using local produce and following what's in season. The group describes a menu built around proximity ingredients.

How the Day Runs

The service is split through the day. Breakfasts run from 10:00 to 12:00, Tuesday to Sunday; on weekdays there's a plato del día at lunch from 13:00 to 16:00; and the carta is served at dinner from 20:00 to 23:00 Tuesday to Friday, at lunch and dinner on Saturday, and non-stop from 13:30 to 21:30 on Sunday. Tables for meals can be booked online, and if you just want a drink you can turn up without a reservation and sit at the grandstand seating, at a table or on the terrace when it's open. The carta changes with what's fresh, so some dishes vary day to day.

A Room for Culture

The Cantina sits by the Cineteca inside the old slaughterhouse complex (mind the stairs, the team warns), and it doubles as a venue: concerts, radio shows and events have all found a home there, and families come by with children between exhibitions and screenings. The food leans simple and shareable, with mezzes, pizzas and combination plates of things like salmon, kofta, roast sweet potato and bulgur, and in summer the terrace near the Manzanares is the main draw.
