The Story

La Guisandera de Piñera is an Asturian restaurant in Castillejos, in Madrid's Tetuán district. Its name is a homage to the guisanderas, the stew-makers of Asturias, more guardians of the old recipes than chefs, and the kitchen treats the stew as the region's most expressive dish. It's open every day, Monday to Saturday from 13:00 to 23:00 and Sunday from 13:00 to 17:00.

From Piñera to La Guisandera

Piñera, the Marrón brothers' restaurant near Plaza de Castilla, had several lives: at one point Benjamín Urdiain, the historic chef of Zalacaín, advised the kitchen after retiring, and it went through frequent changes of cooks and front-of-house teams. Around 2020 the family renamed it and relaunched it as an Asturian casa built on slow-cooked stews, with a refreshed room and a new team in the dining room.

The name is a tribute. Guisanderas are the Asturian women cooks who kept and passed down the region's recipe book, and the one this house honours is Marcelina Fuertes, born in the village of Piñera, mother of Manuel and Tino and grandmother of María José. Some of the pots she cooked with are on display in the main dining room.

The Carta

Sourcing is spelled out: fabes from La Granja, cured compango from the north, Hazas anchovies, Cantabrian seafood and pitu de caleya, the free-range Asturian chicken. The fabada and the verdinas stewed with seafood are the two dishes people come for, and the cachopo is made with solomillo and cecina and fried to order, a version first created as a tribute to Fernando Martín. Tripe comes as callos a la asturiana de Pedro Martino.

Beyond those, the current carta takes in minced-meat croquettes, creamy cod fritters, hake tortilla, grilled octopus with a creamy potato stew, a spider crab pâté, rice with pitu de caleya or scarlet prawns, squid in its ink with rice, cod al pil-pil, oxtail in red wine, an Asturian IGP beef steak tartare and pitu stewed with potatoes. Desserts are listed as llambionadas, the Asturian word for sweets: rice pudding with caramel powder, an Asturian cheesecake, torrija and a cider apple sorbet, plus a board of Asturian cheeses.

Rooms and Wine

The main dining room mixes wood and plants, with a bar area, a space with low tables and a large outdoor terrace. There are two private rooms: one on the upper level overlooking the entrance, and one inside the wine cellar itself, reached through the kitchen. The wine list, which has run past 300 references, gives pride of place to Asturian wines from DOP Cangas alongside the major Spanish regions and bottles from abroad.

The Team

La Guisandera de Piñera belongs to the Marrón family: brothers Manuel and Tino Marrón and Tino's daughter María José. The house on Rosario Pino was their restaurant Piñera for years before they renamed it and changed its cooking. For the relaunch they brought in Pedro Martino, one of the key names of modern Asturian cooking, who worked at Trascorrales with Fernando Martín, won a Michelin star at L'Alezna outside Oviedo and now runs his own restaurant in Caces. Martino designed the carta, and chef Ángel Blas has cooked it day to day. Jenner Bardales has run the dining room and the wine cellar. La Guisandera also appears among the restaurants of Grupo Urrechu, the group behind Urrechu Velázquez and Zalacaín, which dates its opening to 2020.
