The Story
Urrechu Velázquez sets out to be an experience across the senses, laid out over five salones and an outdoor terrace, three named by colour, plus a fireplace room and an upstairs room built around a panoramic screen. It's on Calle de Velázquez in the Avenida de América area of Chamartín, and listed in the Guía Repsol.
The Cuisine
Spanish cooking with mostly Basque roots, continuing the carta that made the Pozuelo restaurant's name. Starters run from hand-cut Iberian ham, anchovy fillets and cecina with Idiazábal to a creamy ensaladilla rusa and steak tartare, with first courses such as tiger prawns over spider-crab ajoarriero, scallop salad with artichoke ravioli, and brioches of spider crab and oxtail. Fish includes hake with its own pastel and smoked caviar, a marmitako of langoustine and squid, monkfish over txangurro a la donostiarra, cod kokotxas al pil-pil and a creamy carabinero rice. Meats, all with denominación de origen, run to solomillo with Stroganoff sauce, Iberian trotters stuffed with foie, oxtail in red wine, roast pheasant and a veal short rib confited for ten hours, for two. Desserts end on Basque goxua, a lemon-lime sablé, torrija and a thin hot apple tart.
Five Rooms and a Terrace
The restaurant took over the space on Velázquez long occupied by Nodo. It's laid out as a sequence of rooms: armchairs by the bar at the entrance, three salons named for their colours, pink, green and brown, a fireplace room with banquettes and round tables, and a small interior terrace that feels like an oasis on one of the city's main arteries. The most special room is upstairs, built around a large panoramic screen that projects images of the kitchen, the chef and the produce to ambient music. A professional ham carver works the room.
The Bar
The cocktail list is extensive, with signatures such as Liquid Ruby, made with Brugal 1888, ginger beer and beetroot and winner of the Brugal 'Momentos Únicos' competition, a Paloma with Don Julio and green Chartreuse, and La Plaza with rum, Martini Rubino, amaretto and amontillado, plus alcohol-free versions of several drinks.
The Chef
The Team
The kitchen is led by Íñigo Pérez, known professionally as Iñigo Urrechu, a disciple of Martín Berasategui who opened his first Urrechu in the Zoco shopping centre in Pozuelo in December 2002. Urrechu Velázquez followed in 2017, his jump into the capital. His Grupo Urrechu has since grown to include El Cielo de Urrechu, A'Kangas in La Moraleja and, since 2021, the historic Zalacaín.
