About Katz Madrid

The Story

Katz is the project of David, an Israeli-born engineer who came to cooking after a career in aviation and R&D. He learned to smoke meat and fish as a kid, built his first smoker at twelve, and later worked in a well-known French restaurant in Tel Aviv. The food pulls those threads together: Jewish, American and French, with a spiced, oriental touch.

The Cuisine

It's built around an in-house obrador, baking sourdough in a wood oven, gluten-free breads included. The smoked meats are the signature, pastrami, pulled pork and Angus ribs smoked low and slow, alongside pizzas on slow-fermented organic dough and sandwiches on house bread. The coffee is roasted weekly in Badajoz.
