Oceanika Madrid
Oceanika Madrid
Oceanika is chef and owner Carlos Pérez's restaurant on Calle Antonio Pérez, near Velázquez in El Viso, cooking what it calls 'illusionist' food since around 2017: Peruvian and criollo flavours served as trompe-l'oeil, from a seafood broth poured from a moka pot to 'churros' of cheese-filled corn dough and a rice-pudding nigiri for dessert. There's an eight-course tasting menu, a carta and a terrace.

Background
About Oceanika Madrid
The Story
'In Oceanika nothing is what it seems' is the house motto: you might be at the foot of Hogwarts' stairs, inside a Dalí painting or in the middle of a David Copperfield trick. Chef and owner Carlos Pérez opened it around 2017 on a mix of good raw materials, the flavours of Peru and playful trompe-l'oeil at reasonable prices, and later added an eight-course tasting menu. The show, as the house puts it, is the 'transmutation': a meal that can start with coffee and finish with sushi for dessert.
The Cuisine
Peruvian and criollo flavours, served as illusions. The tasting menu has included a deconstructed moka pot holding a fish and shellfish broth with vegetables and mussels; 'churros con chocolate' made from cheese-filled corn dough with black-bean cream; salmon tiradito with rocoto cream and popcorn; Andalusian-style temakis of cazón in chickpea batter; a 'transmuting' Bloody Mary; tuna ceviche; ají de gallina in corn-tortilla cones; and 'sweet sushi', a fake nigiri of rice pudding with guava and jalapeño compote. Lomo saltado is cooked at the table.
The Tasting Menu
The eight-course tasting menu is the best way to see the idea, with each dish explained at the table and some finished in front of you. Expect sleight of hand rather than formality: dessert disguised as sushi, a starter that looks like breakfast, and a ceviche flamed at the table. There's also a carta for a shorter meal and, in season, a Christmas menu.
