La Caníbal opened at the end of 2018 on Calle Argumosa in Lavapiés as the evolution of the family's Galician restaurant O Pazo de Lugo, and it holds a Solete in the Guía Repsol. Owner Javier Vázquez built it around fermentation, craft and closeness: a wall of sixteen natural wines on tap, more than 500 low-intervention labels, about 200 beers including its own brews, and a cheese counter. The kitchen, now led by young chef Carlos Manuel Méndez, cooks the market and the season, and the house won Madrid's 2023 tapas championship for its cockles in Trappist-beer escabeche.

About La Canibal

The Story

La Caníbal was born at the end of 2018 as the natural evolution of O Pazo de Lugo, the family's Galician restaurant on the same site, with three ideas: fermentation, craft and proximity. Owner Javier Vázquez brought his passion for honest wines, great beer and artisan produce into that family house; the director is Carlos Campillo, a French-Spanish pioneer of natural wine who has run his own bistros, and the wine team is led by sommelier Pablo González, who favours small growers and, where possible, Galician ones. The beer side started in 2015 with a pale ale brewed for staff training, then travelled between friends' breweries around Spain until October 2023, when the team took over the former MadBrewing building in San Blas and opened its own brewery, now run by Rio-born brewer Daniel Souto.

The Cuisine

Market and seasonal cooking with a Galician backbone, designed to share and to sit alongside the wine, beer and cheese. In 2023 then-chef Miguel Santamaría won the II Official Championship of Tapas and Pinchos of the Comunidad de Madrid with cockles in a vinegar escabeche made with Trappist beer, and the house has also taken the Premio Vinos y Licores at the Madrid gastronomy awards.

The Carta

Galicia runs through the menu: pulpo a feira with olive oil, salt and both paprikas (€26), which the house has served since 1971, sweet Entroido crêpes and a cheesecake made with San Simón. Starters include French oysters, a smoked-sardine Russian salad, squid-ink croquetas in kataifi, ham croquetas with chorizo and San Simón, Andalusian-style baby squid, cecina, charcoal-roasted leeks with pesto, an Ibérico torrezno with kimchi and a coca with smoked sardines from the oak-charcoal oven. Mains run from duck rice and a lobster caldoso for two to hake in green sauce with clams, steak tartare, beef cheek in red wine, Angus skirt with chimichurri and a 400 g rib-eye (€37).

Wine, Beer and Cheese

Beyond the sixteen taps, the sommeliers keep at least 500 bottles of low-intervention wine, with good depth in fortified wines and Champagne, and make their own tap cuvées with friendly growers. The house beers include a Munich-style dunkel, an imperial Baltic porter, a San Blas lager and an IPA named after the brewery's street, alongside around 200 bottles and cans chosen by beer sommelier Tanchi Cabello. The cheese counter builds themed boards of five artisan cheeses (€19.50), from Galician and Asturian to gold-medal winners, or you can build your own. It opens daily, from 09:00 on weekdays and from noon at weekends, until midnight, and runs tastings, themed dinners and brewery visits.

A carefully designed room with a Galician soul. The centrepiece is a mural wall of taps pouring sixteen 'sincere' wines, each with the grower's name and photo, which Vázquez describes as taking the tie off wine. Manager Jose Manuel Pérez chooses the indie music, and staff are happy to steer you through the cheese boards and the wine list.

Getting There

Calle de Argumosa 28, in Lavapiés, on the site of the long-running Galician restaurant O Pazo de Lugo. La Caníbal also has its own brewery and taproom, La Fábrica, at Calle Julián Camarillo 19 in San Blas.

Nearby

Lavapiés is a steeply layered corner of central Madrid, a tight grid of narrow streets where the cooking comes from everywhere at once. The rooms are small, the prices are honest, and the good ones fill with regulars rather than reservations. Museo Reina Sofía and CaixaForum Madrid sit uphill from it, El Rastro at the bottom.
