The Story

Casa Mories sets out to renew traditional cooking, with what it calls a passion for raw ingredients and recognisable dishes where every element earns its place.

The Cuisine

Traditional market cooking brought up to date. Starters include Gillardeau oysters, grilled sweetbreads with caviar, cecina and carabinero croquetas, and a ceviche; to share there are three-texture bravas, slow-cooked torrezno and huevos rotos with carabinero. Stews and rices run to callos, oxtail risotto and carabinero rice; fish to skate in black butter and a whole grilled sole; meat to steak tartare on bone marrow.

Prices

Bites start at €3 for a croqueta and €5 for anchovy on brioche; sharing plates are mostly €10 to €22; stews and rices €22 to €35; and the solomillo €34. The sapito a la bilbaína for two is €42.
