The Story

Colores y Sabores opened in Lavapies to bring Senegalese and Dominican cooking to Madrid, and the same team has run it for more than ten years. The owners describe it as a piece of Senegal and the Dominican Republic served on a plate, in a room built for sharing.

The Cuisine

Expect intensely spiced West African and Caribbean home cooking: rice dishes with peanut sauce, fufu, lamb dibi, fried plantain and yuca arepas, finished with natural African drinks.

Cooking Is Remembering

The owner opened Colores y Sabores to share their culture through food, with recipes learned watching their mother cook and ingredients you'd otherwise find in the markets of Dakar or Santiago. On the Senegalese side there's mafé, a thick meat stew in peanut sauce, yassa of chicken marinated in lemon and onion, thieboudienne, Senegal's national rice-and-fish dish, grilled lamb dibi and whole fried fish; from the Dominican side, yuca arepas, fried plantain and fufu. Desserts include tres leches and a baobab tart, and everything can be ordered to take away.

African Drinks

The drinks are half the fun: bissap of hibiscus, ginger with pineapple, dakhar of tamarind and bouye of baobab fruit, plus a bissap-bouye blend, all made in house. Hot, there's ataya, Senegalese mint tea, and café Touba, the traditional spiced Senegalese coffee. Cocktails include mojitos made with bissap or ginger, daiquiris and caipirinhas.
