The Story
Amets, 'dream' in Basque, opened in Madrid in 2024 as the first restaurant led by chef Diego Sánchez. The idea was a relaxed space for reinvented Basque cooking and author wines.
The Cuisine
The kitchen reworks Basque cooking and pairs it with author wines. The menu changes daily with what nature provides, so the offer adapts to whatever produce is available that day.
The September Carta
The short carta changes with the season. In September 2026 it ran from a house gilda (€3) and a pumpkin crème brûlée with sour cream to aged-beef tartare with bone-marrow hollandaise on brioche, smoked aubergine in Filipino adobo, glass peppers stuffed with escalivada over a citrus cod pil-pil with kokotxas, grilled bonito with a marmitako reduction, chipirones encebollados in their ink with chipotle, an open ravioli of wild mushrooms with cured egg yolk, and a txuleta grilled in leek ash (€24). Desserts include goxua foam with banana masala and an apple tart with salted caramel.
Wine and Philosophy
The wine list leans to small producers: txakolis from Getaria and Bizkaia (Artadi, Hasiberriak, Makatzak, Itsas Mendi), Sanlúcar and Cádiz palominos, Galician and Penedès whites and grower Champagnes. The house rests on three pillars: organic, local producers who care for land and sea, flavour and enjoyment in every detail, and emerging artisans and artists for the tableware and room. Allergies can be accommodated with notice.

Dinner Wednesday and Thursday (20:00 to 23:30), lunch and dinner Friday and Saturday (to 00:30) and Sunday lunch (13:30 to 17:30); closed Monday and Tuesday. Book through TheFork from the website or call 919 95 21 71.
