The Story
The house sums itself up in four words on its own site: quesos, vinos y buena comida. Alongside the bar it sells gift vouchers and runs a programme of guided pairing tastings, the Catas Maridaje, released in named series.
The Cuisine
Cheese and wine, paired. The cheese board is the centre of it, often put together around your own tastes, with cooked plates alongside, mushrooms with smoked cheese and a burrata among them. The guided pairing tastings, the Catas Maridaje, are the format the house builds around: each cheese and wine is explained at the table, and they're sold ahead as tastings or gift vouchers and redeemed on fixed sittings.
The Team
Founder Marcelo Álvarez Borderre, the house fromelier, chooses the cheeses and wines every week and regularly visits the producers to learn how each cheesemaker and winemaker works; he has sat on the juries of Gourmet Quesos, Alimentos de España, the World Cheese Awards, Quesos de Madrid and the Idiazábal best-cheese competition. Chef María Teresa 'Marité' Madrid trained in Chile under Guillermo Rodríguez, cooked at the Chilean Embassy and has shared a kitchen with Arzak; her cooking ties dairy into every dish. Daniela Presta runs the room.

Built around a counter of cheese and a wine list rather than a kitchen, which sets the pace: this is a sit-and-graze room, not a two-course one.
