About La Fisna
The Story
Delia Baeza opened La Fisna in May 2008 on Calle Doctor Fourquet, as a shop and tasting centre. In February 2016 it moved to Amparo 91 and added the wine bar, so it now works as bar, shop, tasting room, importer and distributor at once. The building was Casa Donato, a castiza taberna and wine bar before it, and the original architecture stayed put.
The Cuisine
Wine-led and traditional. The list runs on small producers, with natural wines well represented, and the house ages some of the best bottles that pass through it, moving them onto the carta as they come round. The by-the-glass choice is wide, with a sommelier on hand for pairing advice. The food carta is deliberately short and made daily because the space is small: seasonal product plated with care, with cheese boards, cecina and patatas revolconas among the plates.

Delia Baeza founded La Fisna in 2008. In the kitchen, the house's cooks work the seasonal product into a short daily carta, and on the floor it puts hospitality on a par with what's in the glass.

Quiet, with the music kept low, and the room reads classic and a little rustic. The wine list is the reason people are here, heavy on natural wine and small growers, and the service is attentive without hovering.
