Background
About Cruix
The Story
Cruix opened in a former Chinese-Galician bar on Carrer d'Entença and quickly built a reputation for doing something genuinely unusual: putting Valencian rice culture at the heart of a Barcelona tasting menu. Chef Miquel Pardo, from Valencia, wanted to create a space where his friends could eat, and the most Valencian thing he knew how to do was put a great paella in the middle of the table. The Michelin Guide awarded the restaurant a Bib Gourmand, the designation for outstanding cooking at moderate prices. Barcelona gives it 4 out of 5, calling it full of 'youth and testosterone' and praising the potential to 'crush the competition, creating popular food with a haute cuisine background'.
The Cuisine
The Menu Cruix tasting menu (11 courses, €68 per person) is built around Miquel Pardo's rice dishes, always served with the proper crispy socarrat at the bottom of the pan, which Michelin inspectors call 'worthy of special mention'. A full à la carte offers oysters, finger foods, hot and cold plates, five paellas in two sizes, and creative desserts. Michelin picks out the cod churro, fried to a crispy golden texture, and recommends the dessert named 'sad day at the beach'. awards the food 7.8 out of 10.
The Team
Chef Miquel Pardo (Valencia) leads the kitchen with a philosophy of transforming humble, seasonal ingredients into creative tasting-menu courses. Carlos Rodríguez, from Valladolid, runs the front of house and the wine programme.
