The name is a play on 'vermut' (vermouth), and the bar has become one of Barcelona's most beloved dining destinations. The concept sits between a tapas bar and a stylish restaurant -- a 'tavern for sybarites'. Robert De Niro famously became a regular after his first visit in 2012, returning for 10 consecutive days and developing a friendship with Kim Diaz. The bar celebrated its 20th anniversary in 2025. It is part of the Mutis Group, which also includes Bodega Solera, Entrepanes Diaz, and Trattoria Enriquetto.

The Cuisine

Chef Albert Mendiola leads a market-driven kitchen with no traditional printed menu -- the daily offerings are written on a chalkboard based on what arrives from the market. Kim Diaz traces the culinary roots to his mother's maritime cooking from a fishing neighbourhood, and his grandmother's legendary croquetas and guisos.
