Background

About Asador El Bierzo

The Story

Asador El Bierzo was founded by Víctor García, originally from Hornija in León. After more than four decades in the industry that began with washing dishes, García opened La Taberna del Bierzo and then this asador with the stated aim of bringing Bierzo cuisine to Catalan diners. The venue covers 690 square metres, with two main dining rooms, seven private rooms for groups, and two terraces.

The Cuisine

The kitchen centres on Bierzo and León regional cooking, with grilled meats and bacalao specialities alongside a broad tapas offering. The carta runs from cold starters like esqueixada de bacalao and pimientos asados del Bierzo to grill dishes such as chuletón de ternera gallega, cochinillo crujiente, espaldita de cabrito lechal a la segoviana, and bacalao 'a la llauna'. Rice dishes include arroz caldoso de bogabante and arroz negro con almejas. The house keeps an encargo-only botillo del Bierzo, a León speciality, and finishes with desserts such as castañas del Bierzo en almíbar and tarta de Santiago.

The Team

The house is led by founder-owner Víctor García. No head chef is publicly credited; the kitchen is presented as a team operation grounded in García's Bierzo background and 40+ years of restaurant experience.
