Guri is the vision of Uruguayan-born chef Nicolas Zas, who left engineering studies in Uruguay after a holiday in the Canary Islands turned into almost a decade and led him into professional kitchens. He went on to train in Australia and later New Zealand before settling in Barcelona. The name 'Guri' is what Uruguayans call children -- for Nicolas it stands for roots, identity and the curiosity that drives the project. The restaurant opened in Hostafrancs as a space where fire, ferments and time transform simple ingredients.
The Cuisine
The kitchen operates on three pillars: fire, ferments and time. Nicolas Zas blends Rio de la Plata identity with the Mediterranean pantry, working with organic, locally sourced produce and processes of maturation, fermentation and live fire. Dishes span the a la carte Letter (snacks, mains, desserts) and four tasting menus, with plates like lemon fish with white garlic and chipotle, aged Friesian beef sirloin with chimichurri, tortelloni with duck and kefir, and the signature Mate dessert of gin, lemon and citrus amazake.

Chef and founder Nicolas Zas leads the kitchen, supported by a compact team in an open-kitchen dining room of sixteen seats. He works closely with his partner Beatriz, whom he met in Barcelona before the couple spent a formative period in New Zealand.
