A Pluma is chef Eugeni de Diego's gourmet take on the Catalan rotisserie. A former elBulli cook and ex-director of the Bulli Lab, he opened the concept to prove that pollo a l'ast, the Sunday staple of every Catalan family, deserves the same technique and ingredient obsession as fine dining. The Santaló location on the edge of Sant Gervasi was the first of several A Pluma rotisseries around Barcelona.
