The name 'macambo' is an Amazonian superfood related to cacao, almost unknown in Europe, known as 'el chocolate blanco de la selva', the white chocolate of the jungle. Sihuay describes his menu as the result of selecting 'the best players for a Champions match': every dish on the card represents a career's worth of cooking, compressed into a single kitchen with two floors, a terrace, and private dining rooms in Barcelona's upper city.

The menu draws from every region of Peru: duck thigh from the north, coastal ceviches, jungle chorizo, and Nikkei sushi with Japanese influence.
