Sukalde ("kitchen" in Basque) is a Grupo La Vasca restaurant on Carrer de Bonaire in central Palma, a few doors from the group's original venue, La Vasca. The restaurant's own site describes an inauguration event, and the regional paper Ultima Hora covered its "new stage" on Carrer de Bonaire on 31 May 2026, so the current Bonaire address reflects a relatively recent relaunch of the concept; some older third-party listings (TripAdvisor, TheFork, review blogs) still describe an earlier phase of Sukalde as being inside Palma's Puro Grand Hotel, which is a different address (Carrer del Forn de la Gloria) about a kilometre away. The venue is built as two spaces in one building: a ground-floor bar and pintxos room, and an upstairs restaurant and cocktail bar.
The Cuisine
The kitchen cooks contemporary Basque food built around technique, fire and seasonal produce: a charcoal-grill (Josper) a la carte of starters, fish and meat downstairs (dry-aged beef chops sold by weight, whole grilled fish for two, cod pil pil, hake in green sauce), plus a separate pintxos and "colmado" (deli-style) menu upstairs with gildas, tinned-style shareable plates and hot bites.
