The Story

Saltao is a new Peruvian-Mediterranean restaurant inside the renovated Club de Mar marina in Palma, opened in July 2026 as part of a wider relaunch of the club's dining and retail spaces (a project also including sister restaurant Azotea Club de Mar, the relaunched Mar Salada by Crudo, and the members' Lounge Club de Mar). Saltao occupies a first-line space with an interior patio and direct views over the port's activity, with a dining room, a cocktail bar and a terrace facing the marina. It is run locally by Azotea Grupo, a Spanish hospitality group founded in 2011 that operates around a dozen restaurant concepts across Madrid, Andalusia and Mallorca, including a sister Saltao restaurant at El Lago Club in Marbella.

The Cuisine

Saltao's kitchen reworks Peruvian dishes with Mediterranean ingredients: press coverage of the opening describes ceviches, tiraditos, anticuchos and other plates meant for sharing. Azotea Grupo has positioned Saltao as the informal, casual counterpart to the fine-dining cooking of the Gutierrez family's flagship restaurant.
