Azotea Grupo's two new restaurants at Club de Mar are named: Azotea Club de Mar and Saltao

Azotea Grupo's two new restaurants at Palma's relaunched Club de Mar now have names, concepts and chefs attached, according to Tapas Magazine and Revista de Hostelería y Turismo. Azotea Club de Mar sits on the upper floor of the historic sailing club with views over the marina and Palma's skyline, while Saltao shares the site with a dining room, bar and terrace facing the port.

Azotea Club de Mar is led by Manuel Berganza, executive chef of Azotea Grupo, with a Mediterranean menu built around seasonality and wild fish. Dishes on the menu include tuna tartare with tomato water and olive, red prawn carpaccio with caviar and lemon, wild fish served two ways (Majorcan-style sashimi and fried), carabinero prawn rice, fresh pasta with lobster, salt-baked red prawn, grilled scampi with hollandaise sauce, and pargo with its own sea essence. Marta de la Rica designed the interiors, aiming for what the group describes as a constant dialogue between the space and the landscape outside.

Saltao is a Peruvian-Mediterranean restaurant from Víctor Gutiérrez, chef of the Michelin-starred Tayta (Spain's only Peruvian restaurant with a star), and his daughter Paula Gutiérrez, named Best Female Chef of the Year 2026. The roughly 300-square-metre space serves Peruvian classics such as ceviche with the day's catch, corvina tiradito in avocado tiger's milk with jalapeños, and the traditional lomo saltao, with pisco driving the cocktail list. Madrid studio Mesonero-Romanos designed the interiors in terracotta and clay tones paired with Mediterranean blues and greens. It's Saltao's second site after El Lago Club in Marbella.

Both restaurants are open to club members as well as outside residents and visitors, and their arrival follows Club de Mar-Mallorca's relaunch after a reported €95 million renovation. Azotea Grupo runs more than fifteen restaurants across Madrid, Andalusia and the Balearics. Founder and CEO José Manuel García said: "We've always felt a special attraction to places that tell their own story.
