
Azotea Grupo opens two restaurants at Palma's relaunched Club de Mar
Madrid hospitality group Azotea Grupo opened two restaurants this July inside Palma's newly renovated Club de Mar marina: Azotea Club de Mar, a Mediterranean restaurant led by chef Manuel Berganza, and Saltao, a Peruvian-Mediterranean concept from chef Víctor Gutiérrez of Michelin-starred Tayta and his daughter, chef Paula Gutiérrez. Both sit inside the club's revamped dining complex, open to the public alongside members.
Azotea Grupo, the Madrid hospitality group, opened two restaurants at once this July inside the newly renovated Club de Mar marina club on Palma's Muelle Pelaires. Azotea Club de Mar opened to the public on 15 July, after operating for years as a dining room reserved for club members only. Sister restaurant Saltao opened alongside it as part of the same relaunch, according to Tapas Magazine and Revista Hostelería.
Azotea Club de Mar occupies the club's first floor, with views over the marina and Palma's skyline. Its kitchen, run by executive chef Manuel Berganza, centres on market produce: seasonal fish, seafood and simple desserts rather than tasting-menu theatrics. During the day the restaurant stays reserved for Club de Mar members; in the evenings and on weekends it opens to the public by reservation. Interior designer Marta de la Rica did the room, working with light woods and natural textiles to keep the club's existing character.
Saltao's menu was designed by chef Víctor Gutiérrez, whose restaurant Tayta in Salamanca is described by both Tapas Magazine and Revista Hostelería as Spain's only Michelin-starred Peruvian restaurant, working alongside his daughter, chef Paula Gutiérrez, whom both outlets credit as Spain's best female chef of 2026. The roughly 300-square-metre space, designed by Madrid studio Mesonero-Romanos in terracotta, clay and Mediterranean blues, holds a dining room, a cocktail bar and a terrace facing the port. The kitchen reworks Peruvian staples such as ceviche and tiradito with Mediterranean ingredients, built for sharing. It's Saltao's second location; the first opened at El Lago Club in Marbella, per Revista Hostelería.
Both restaurants are run day to day by Azotea Grupo, which Revista Hostelería reports now has more than 15 restaurant projects across Madrid, Andalusia and the Balearics. Founder and CEO José Manuel García has framed the Club de Mar project as an example of the group's preference for spaces with their own history over building from scratch.
