Background
About Miceli
The Story
Miceli is Marga Coll's restaurant in Selva, a small village at the foot of the Serra de Tramuntana in northern Mallorca. She opened it on 31 March 2012 with her husband Javier Arés, who runs the dining room and the wine. The name comes from the mycelium, the root network of a fungus that draws nutrients from the soil, which fits the kitchen's idea of working straight from the land. The Michelin Guide gives Miceli a Bib Gourmand, its mark for good cooking at a friendly price, and Repsol lists it as Recomendado. Coll has since added two more places under the same philosophy: Arrels by Marga Coll, opened 2016 at the Gran Meliá de Mar hotel in Illetas, and La Barra de Miceli, opened 2018 inside the Inca market.
The Cuisine
The whole point at Miceli is the market. There's no printed menu. Marga Coll goes to the Inca market, her main supplier, and builds the day's cooking around whatever's good that morning, so the menu changes daily with the season. The base is traditional: Mallorcan stews (guisos a la mallorquina) and produce from the huerta. Repsol describes the format as a choice between two different tasting menus or the always-changing carte. On the website the structure is roughly appetisers, first courses, mains and desserts, plus tasting menus. Prices and dishes move with the market, so confirm directly.
The Chef
The Team
Marga Coll is the chef and has cooked since the mid-1990s, working in Mallorcan restaurants before opening Miceli in 2012. Her husband Javier Arés co-runs the restaurant, overseeing the dining room and the wine list.
