The Story
Hotel Corazón is a 15-room boutique hotel built into a renovated historic finca on the Carretera de Deià, roughly at kilometre 56.7, between Deià and Sóller. It's run by British photographer Kate Bellm and artist Edgar Lopez, first-time hoteliers who describe the property as rooms, a restaurant, a farm, an art space and a shop. The restaurant runs off an open-air terrace with mountain views, and its food follows the hotel's wider farming project: around 50 raised garden beds grow vegetables, fruit and herbs without pesticides, using regenerative growing methods, and the kitchen builds its dishes around whatever the garden and local producers have on a given day.

The kitchen serves breakfast, lunch and dinner on the terrace, cooking simple, Mediterranean-leaning dishes finished with edible flowers and herbs from the on-site garden. Hotel Corazón's own site names real dishes such as salted roasted Mallorcan almonds, fried artichokes with pistachio aioli, labneh with caramelised harissa, a rib-eye steak, a fresh seabream fillet and seasonal pasta, with some dishes marked lunch-only or dinner-only. No prices are published for any of it, and the lineup is described as changing with the seasons.

Head chef Eliza Parchanska leads the kitchen. She's Polish, spent more than five years in Madrid working at restaurants including Teatro Real and Lakasa, and was living in Mallorca when a couple opening what became Hotel Corazón reached out to her on Instagram to build the restaurant's menu. Her cooking draws on her Polish background alongside Mediterranean and Middle Eastern influences, shaped day to day by the garden and by local seafood suppliers.
