Grill-led, product-first cooking served as plates to share. The kitchen runs on two Basque grills and an oven, with no deep fryers and no microwave, which pushes everything onto fire and technique: marinating, fermentation, maceration, even ageing fish. The base is Mediterranean and local, but the menu borrows from Japanese, Scandinavian and Latin cooking, and it changes four or five times a year with the seasons.
