The Story
Sāntal occupies a restored 17th-century windmill in Santa Catalina, one of the buildings that once ground grain and pumped water across Mallorca. Owner Rodrigo Moreno built the café around single-origin pour-overs and flat whites, an expanding brunch menu and daily in-house pastries, without the pretension he says can tag along with specialty coffee culture. In 2025 the Palma location was one of two Palma venues awarded a Solete in the Guía Repsol.
