The Story

Volvoreta is the restaurant on the 30th floor of the Eurostars Madrid Tower hotel, at the top of Paseo de la Castellana. Volvoreta is Galician for butterfly, and the dining room plays on it with a cloud of red butterflies overhead, an installation by the artist Nina Boy (Xavi Muñoz). Executive chef Gorka Alonso runs the kitchen, and Almir Gjoka leads the dining room.

The kitchen cooks traditional food rooted in the area, based on classic recipes where local produce does the heavy lifting and the plating aims to surprise. Galicia shows up throughout, including beef from Pazo de Recimil, reared to natural rhythms and animal-welfare standards. Executive chef Gorka Alonso leads the team.

Volvoreta Experiences

Every season the restaurant hands the kitchen to a guest chef for a Volvoreta Experience, built around one product or regional tradition. Past editions have brought Ricardo Sotres with Asturian fabada and Llanes hake, Rubén Sánchez Camacho of Epílogo with a tribute to La Mancha in the eighth edition, and Roberto Panizza with Genoese cooking.
