The Story
Taberneros opened in 1999 on Calle de Santiago, between Calle Mayor and the Royal Palace, with a clear idea: a place where traditional Spanish flavours and good wine meet. It's a small operation, a team of seven by its own count, that cooks for both visitors and loyal neighbours. It trades on Madrid home cooking and, on its own account, on wine: its sommelier Fernando Muñoz, a Nariz de Plata winner, builds a cellar that runs from small boutique bodegas to limited editions and classics like Vega Sicilia. It's on Calle de Santiago in central Madrid, and it's listed in the Guía Repsol.

The Carta
The carta mixes Madrid standards with a few travelled touches. Starters include salmorejo, an ensaladilla with wasabi mayonnaise and smoked-salmon tartare, caramelised aubergines in miso, scallops gratinéed with cava, cod, cauliflower and saffron fritters, a cazuela of callos and morro a la madrileña (€17.80), a deliberately 'badly made' tortilla of free-range eggs with verdinas and wild mushrooms, the house octopus with miso or a la gallega, partridge escabeche, a Guayaquil-style sea-bass tiradito and croquetas of cocido pringá. Mains, mostly €15 to €25, run from verdinas with cod and prawns, a squid-ink fideuá and a shellfish paella for two to confit cod a la vizcaína, baked corvina with tempura aubergine, a Thai-style veal cheek, Cordovan rabo de toro, Ibérico presa with potato parmentier, grilled beef loin and a spicy ceviche of lomo alto.
