The Story
Soy Kitchen is chef Julio Zhang's most personal project, built around what he calls alta cocina china de autor, Chinese technique applied to Spanish product rather than standard Chinese-Spanish fare, cooking with local, seasonal ingredients. Dim sum is served from a live barra, with staff guiding diners through the varieties.
The Cuisine
Beyond the xiao long bao and the wok-seared lobster, the menu runs to yiang lou chino, a carrot stew with soy vinaigrette, Sichuan pepper and lamb, xiao mai filled with meat stew, broth, tree tomato and nori seaweed, and a chili crab. Two tasting menus, Long (nine courses, €85) and Hu (eight courses, €75), run alongside the carta.
From Gran Vía to Zurbano
Soy Kitchen began in 2013 in a small space in the streets just off Gran Vía, where Zhang made his name with dishes that have since become house classics: the wok-seared lobster, the suckling-pig ear and the dim sum. After four years there he needed a bigger kitchen, and in 2017 moved to Calle Zurbano, in Almagro. The new room, a full renovation by Lázaro Estudio, was designed with an oriental soul and a cosmopolitan spirit around one idea: a big window into the kitchen, so guests can watch him work.
The Chef: Julio Zhang
Julio Zhang, born Yong Ping Zhang in Beijing with roots in imperial Chinese cooking, first chose Pamplona to get to know Spanish regional produce and methods before settling in Madrid. He founded Soy Kitchen in 2013, and it is his most personal project, alongside its sister restaurant Lamian. His idea of alta cocina china de autor applies Chinese technique to Spanish, local and seasonal produce. It is recommended in the Michelin Guide and holds one Repsol Sol.
Dim Sum and the Carta
Dim sum is made live at the bar, and staff guide diners through the varieties: black har gow under a veil of Joselito pork, xie huang with txangurro, pork and shrimp xiao long bao, pork-cheek siu mai with truffle, and gyozas of oxtail with kimchi or lamb with Chinese pumpkin (€12 to €16.50). Starters include braised and glazed suckling-pig ears, Hong Kong-style wok mussels, corvina with yuzu kosho, veal bone marrow with smoked Chinese aubergine and a crispy rice taco with txangurro and soft-shell crab. Mains run from chili crab (€33), Kung Pao turbot and low-temperature mallard to curried veal cheeks, handmade ban mian noodles and Grandma Zhang's wok aubergine.

The Team
Julio Zhang, full name Yong Ping Zhang, is a chef from Beijing with roots in imperial Chinese cuisine, who learned to cook in Hong Kong. He first chose Pamplona to get to know Spanish regional products and methods, and it was there that he became Julio: regulars booking tables found his Chinese name hard to say and shortened it. He then settled in Madrid.
