Miyama Castellana is the second restaurant of Miyama, the Japanese house that took over the old Tokio Taro site off Gran Vía in 2004. It opened in early 2009 at Paseo de la Castellana 45, in a chestnut-wood room by Mad & Asociados with an 11-seat sushi bar, and chef Junji Odaka cooks a broader carta than the original, from sushi and sashimi to traditional stews.

About Miyama Castellana

The Story

Miyama, 'the beautiful mountain', opened in September 2004 in the former Tokio Taro, taking over from sushi master Masao Kikuchi with a more modern style of Japanese cooking. The Castellana restaurant followed in the first days of 2009, in Madrid's financial district, with the same philosophy: contemporary Japanese cooking, top raw materials and pure, balanced flavours. The original, now Miyama Flor Baja, carries on as a separate restaurant with its own carta.

The Cuisine

Contemporary Japanese with a wide range. Starters run from aubergine with chicken and red miso to Huelva prawn surimi and Cantabrian octopus balls; tatakis of tuna, hamachi, toro and Wagyu; dobin mushi and chawanmushi; and from the grill, kawara soba, miso-marinated gindara (black cod) and Wagyu loin cooked on a hot stone. Tempura, sashimi, nigiri, makis, temakis and nabe stews complete the carta.

The Room and the Sushi Bar

Architects Mad & Asociados designed a minimal but warm space in natural chestnut wood and simple straight lines. An 11-seat sushi bar dominates the dining room, which seats about sixty more at tables. The bar is where to sit for nigiri and sashimi cut in front of you.

What to Order

The carta is long, so the Miyama Bento is a good way in: a tasting of chawanmushi, gindara, Wagyu, tempura, sashimi and more. Otherwise, pick a tataki (tuna €29, toro €33, Wagyu €37), the miso-marinated black cod (€38), the Ebi Miyama prawn tempura in a crisp basket (€26) and something from the sushi bar. The Wagyu tobanyaki on a hot stone is €50, or €70 with Kobe.

Set Lunches

At lunch there are three fixed menus that can't be changed: sashimi or sushi at €30 and maki at €28, each with miso soup, the day's appetisers, prawn and vegetable tempura, ice cream, coffee and a drink. Food can also be ordered for takeaway from the restaurant's own site.
