Silvestre de Mercado is a bar and kitchen inside the Mercado de Tirso de Molina on Calle de Doña Urraca, in Puerta del Ángel across the river from the old city. Its line is 'deliciosa tradición creativa': Catalan, northern, Andalusian and Extremaduran roots, plus ideas brought back from Asia and Latin America, finished with low-temperature cooking, braising, blowtorch and pickles. There's a sister Silvestre in Becerril de la Sierra.

The Story

Silvestre was born, in its own words, from a love of food, of bars and of eating and drinking somewhere friendly and familiar, with the idea of making the bar a way of life. There are two: this market bar in the Mercado de Tirso de Molina, and a calmer room in Becerril de la Sierra, north of the city.

The Cuisine

Regional Spanish cooking (Catalan, northern, Andalusian, Extremaduran) mixed with what the team has brought back from Asia and Latin America, and evolved with technique. Starters include ensaladilla rusa with huancaína sauce, aubergine meatballs with truffled mash, confit artichokes, a sardine brioche and mussels in green curry.

Mains and bocatas

Mains run to braised pork belly with endive and mash, oxtail cannelloni in Thai curry, marinated tuna tacos with wakame and mango, and a thin fideuá with longaniza and squid. There's a Panceta Burger and a Smash Burger (both €14.50), and desserts like caramelised brioche torrija and a mango crème brûlée.

Vermouth

Silvestre pours its own house vermouth, Silvestre Especial, alongside others on the list, including Zarro from Madrid and Yzaguirre blanco from Reus.
