The house broth follows a Hakata recipe from Fukuoka, a four-hour tonkotsu of pork bones, under a menu of up to 20 ramen, from Tonkotsu, Shoyu and Miso to newer takes, plus a spicy range and a vegan menu.

About Ramen Shifu
The Story
Ramen Shifu opened its first taberna on Calle Ayala in January 2017. Its founder, Guo Jianyong, based the house broth on the original Hakata recipe from Fukuoka, learned first-hand on repeated visits to the region's ramen masters. The group has since grown into a chain of tabernas across Madrid and beyond.
The Cuisine
The broth is a four-hour tonkotsu made with pork bones, dense and whitish, served with thin noodles under a wide ramen menu, up to 20 options, from Tonkotsu, Shoyu and Miso to Fried Chicken, Ebi Tempura and Beef Curry ramen. There's Japanese street food like gyozas and takoyaki, rice dishes, mazesobas, a spicy range and a vegan menu.
