The Story

Paipái is the dream restaurant of its chef, Fernando Ruiz, and of his personal, passionate way of cooking: creative, simple and close to the diner, with quality produce full of flavour and colour that's meant to take you travelling with each bite.

From the carta

Starters run from a mussel-escabeche tosta with guacamango and wasabi mayo (€13) to salmon ceviche with ponzu and chulpe corn, and Paipái torreznos with Mang Tomás and hoisin sauces (€13). Makis include one of ibérico gyoza with crispy squid (€17.50), and nigiris and 'false nigiris' run €3.90 to €5.95, the last a brioche with fresh foie, mango chutney and kabayaki. The street section has baos of massaman prawn or cochinita pibil and a quesataco of ibérico presa, and the mains go from massaman curry of prawns to ibérico cheeks at low temperature (€21) and a 30-day-aged sirloin tataki with yakiniku sauce (€23).
