PaiPai's four-cheese tart wins Madrid's best cheesecake 2026

Chef Fernando Ruiz of PaiPai, on Plaza del Perú in Chamartín, won the sixth edition of the contest for Madrid's best cheesecake, announced on 14 September 2026, with a four-cheese tart served with a sweet-and-sour gilda.

PaiPai's cheesecake was named the best in Madrid for 2026, winning the sixth edition of the contest organised by ACYRE Madrid, held at the Escuela Municipal de Hostelería in the Mercado de Santa Eugenia. The tart is by chef Fernando Ruiz, at PaiPai on Plaza del Perú in Chamartín.

It uses four cheeses: a semi-cured Peñagorda goat's cheese from Alimentos de Miraflores, Gamonéu, mascarpone and a Madrid cream cheese, on a biscuit base made with La Colmenareña butter. It comes with a sweet-and-sour gilda on the side.

Second place went to Prímula Pastelería, Claudia Covarrubias's shop on Calle de Jorge Juan, and third to Tartas by Dani, from Daniel Rescalvo.
