The Story

Mayser has been on Calle de Sambara since 2004, built on a love of old taverns, the long-standing bars of Madrid and Seville, with their chacinas, cheeses, tins, sherry and wines by the glass. The house describes the mood as informal but careful and serious, joining tradition with a few modern touches.

The Cuisine

Honest, product-led cooking with slow-cooked dishes and seasonal produce, traditional and leaning towards the south of Spain. Chacinas, cheeses, tinned seafood and sherry anchor the offer.

Tins, Chacinas and Cheese

The carta opens with conservas: Rías mussels in escabeche, cockles, razor clams and zamburiñas from Los Peperetes, cod liver from Ubago, Ortiz sardinas a la antigua and squid in its ink. Chacinas come with toast and salmorejo, from Black Angus cecina to 40-month acorn-fed ham from Huelva, and the cheese board offers more than forty Spanish and international varieties (from €6 for one). Aperitivos are gildas, smoked sardine and 00 anchovy on focaccia; to share there are Cantabrian anchovies, salazones with almonds, Cádiz chicharrones, ensaladilla with prawns and escabeche bonito, a carabinero tartare with burrata, Soria torreznos and Iberian ham croquetas at €2 each. The slow-cooked dishes lean south.
