Ají y Sillao is a seven-table chifa restaurant on Calle Elfo, in the Quintana barrio of Ciudad Lineal, run by Peruvian couple Miguel Chong and Julie Denegri. They cook the Peruvian-Cantonese food of Miguel's grandfather, Federico Chong Wong, who brought his cooking from China to Huaral, north of Lima. Miguel makes the siu mai by hand; the carta adds wonton soup, wild Atlantic corvina ceviche, ají de gallina, lomo saltado, chaufa and chifa-style roast duck.

About Ají y Sillao
The Story
Miguel Chong and Julie Denegri are a Peruvian couple who left their earlier careers, Julie as a teacher and Miguel installing machinery, to cook. The push came from Miguel's grandfather, Federico Chong Wong, a cook who travelled from China via England to Huaral, north of Lima, where he built a clay oven with his own hands. The couple first imagined a grill house, but found their customers wanted a fuller sit-down meal, and so Ají y Sillao was born, named for chilli and soy sauce, two essential ingredients of both cuisines.
The Cuisine
Chifa, the Peruvian-Cantonese cooking born of Chinese migration to Peru, alongside Peruvian criollo classics: hand-made siu mai and wontons, wild corvina ceviche and tiradito, ají de gallina, lomo saltado, chaufa and roast duck.
The Carta
To start, Miguel's hand-made siu mai of pork, prawn and shiitake (€13.50 for six), fried wontons with sweet-and-sour sauce, anticuchos of beef heart in ají panca, and croquetas of corvina and ají de gallina. The wild Atlantic corvina appears as ceviche with ají limo (€23.90), served with squid chicharrones soaked in the leche de tigre, as a tiradito on ají amarillo cream, and crisp in sweet-and-sour sauce. From the criollo side: ají de gallina (€19.90), causa with chicken and tallarines in huancaína topped with lomo saltado. The house speciality is the wok and oven: chifa-style roast duck (€23.90 a quarter, €41.90 a half), lomo saltado, a premium chaufa with roast pork, duck and prawns, and premium chifa noodles to share. The wonton soup is a regular's order even in summer. Desserts are tres leches, chocolate cake and lúcuma ice cream.
