Docamar
Docamar is a bar de barrio on the pedestrian square off Calle de Alcalá at Plaza de Quintana, in Madrid's Ciudad Lineal district, holding a Solete in the Guía Repsol. Patatas bravas and cañas are the two things it says it does, with the brava sauce built on pimentón de La Vera and cayenne and the recipe dated to 1963. Oreja, patatas alioli, callos, tortilla and rice dishes fill out the carta.

Background
About Docamar
The Story
Docamar traces itself back to el Donato, a small castiza taberna that opened on Calle Galileo in 1930 and was known in its street for vermut, good wine and the welcome behind the bar. Docamar itself says patatas bravas have been the house speciality since it opened, six decades ago.
The Cuisine
Cañas and patatas bravas are the two things the bar puts first, and the brava sauce leans on smoked pimentón de La Vera and cayenne, with oreja and patatas alioli alongside. The rest is the castizo register, callos a la madrileña, calamares, bienmesabe and tortilla de patata, plus a section of rice dishes and fideuás and some more recent cooking. The house even bottles its brava sauce to take home.

Docamar Dining Experience
The bar's own description is the best one: a bar de barrio, the kind it says is disappearing, where the carta runs to escabeches, bravas and ensaladilla rather than anything imported, and where the caña, the house wine and the vermut hold the bar. The square outside is the local one, and the venue says Sunday mornings there have run to a swap meet for more than fifty years.
