Materia Prima is a market restaurant on Calle del Doctor Fleming, in Chamartín near the Santiago Bernabéu. Ricardo Garrastazu opened it in 2012 so diners could pick exactly what and how much to eat: you choose fish, shellfish or meat from the market counter, then the kitchen cooks it a la plancha, baked, in salt or however you ask. Signatures include the socarrat roll of scallop and Huelva white prawn, Galician zamburiñas and a shrimp taco.

About Materia Prima
The Story
The idea came from an everyday frustration. Ricardo Garrastazu noticed that restaurants rarely let you choose freely what and how much to eat; his wife wanted just a couple of prawns and had to order a whole ración. He imagined a place where diners pick the product as at a market, see its quality, set the quantity and choose the cooking. Materia Prima opened on that idea in 2012.
The Cuisine
Market produce cooked to order: fresh fish, shellfish and meat chosen by weight from Spanish fish markets and farms, then grilled, baked, salt-baked or prepared as you prefer.
What to order
White prawns from Huelva come direct from the fish markets of Ayamonte and Isla Cristina. Zamburiñas arrive from Galicia and can be done spicy. Sea bass is sold by the size of the piece, and the house suggestion is to bake it in salt. The socarrat, a crisp roll of scallop and Huelva white prawn topped with alioli, is one of the signature plates, as is the shrimp taco. Desserts run from Choco Pasión and a thin apple tart to tocino de cielo, cheesecake and torrija.
Where to sit
There are four areas to choose from: the main dining room, a heated covered terrace, open-air barrels for a more casual meal and a bar with high tables. Private reservados and event spaces are available too.
