The concept comes from Sevillian chef Rafa Zafra and his partner Ricardo Acquista, reworking the classic 'bikini' toasted sandwich into gourmet entrepanes served with classic and signature cocktails. There's a big cocktail bar and a terrace.

The Story
Bikini Bar is the sandwich-and-cocktail concept from Sevillian chef Rafa Zafra and his partner and fellow chef Ricardo Acquista, the pair behind restaurants like Estimar and Casa Jondal, working with the team at the NH Collection Madrid Eurobuilding. The idea is 'luxury you eat with your hands': taking something as plain as bread and making it sophisticated.
The Cuisine
The menu is all about the bikini and the entrepan, gourmet toasted and filled sandwiches across different breads, cold, hot and sweet, matched with a full list of classic and signature cocktails.
The carta
Bikinis and bocadillos run from a classic ham-and-cheese bikini (€14) and pan de cristal with Iberian shoulder (€17) to a carabinero roll with celery and rocoto mayonnaise, a bikini burger with cheddar, a calamari bocata and an Andalusian serranito with pork tenderloin, serrano ham and green pepper (€19 to €22). There's a separate breakfast menu on weekdays from 08:00, and a cocktail list of classics and house signatures.
