Rocacho is a contemporary asador on Calle del Padre Damián in Hispanoamérica, one of the group's Madrid branches alongside Rocacho Plaza, Rocacho Valdebebas and the seafood-led Aleteo. The holm-oak charcoal grill is the centrepiece, with a wide selection of cuts from El Capricho, from its own farms in Jiménez de Jamuz, León, plus wild turbot, hake, hook-caught squid and thin-layered rices.

The Story

Rocacho takes its name from the rock born of earth and water, a statement of intent for cooking built on top-quality produce and the power of the embers. There are four addresses: Rocacho Plaza in Salamanca, Rocacho Valdebebas, this Padre Damián branch, and Aleteo, the sea-focused sibling.

The Cuisine

Product-first asador cooking over holm-oak charcoal. The meat comes from El Capricho, raised on its own farms in Jiménez de Jamuz (León); the fish runs to wild turbot, hake, bacalao, monkfish and hook-caught squid; rices and fideuás are cooked thin with socarrat, including a paella del señoret and one with cigalas and artichokes. Homemade desserts include flambéed filloas, rice pudding and tiramisu.
