The Story
Jorge Trifón Esteban grew up in the business: his father opened Mesón del Águila in Vicálvaro in 1965, and Trifón was working the kitchen there by age five, running real responsibility by twelve. In 1984 he took over the family business and, with no formal training, hired well-known chefs to cook at weekends so he could learn from them, before opening El Fogón de Trifón under his own name on Calle de Ayala in 2002, near Las Ventas and the Palacio de los Deportes. It passed its twentieth anniversary in 2022.
The Cuisine
Beyond the callos and the rabo de toro, the menu runs to fideos con almejas, noodles with clams, venison with onions and roasted potatoes, and a cheesecake finished with black olive notes. Boletus come from Sierra de la Morcuera and tomatoes from Sierra de la Culebra, the sourcing detail Trifón built the kitchen's slow-cooked style around.
The Classics
The carta is classic Spanish cooking with a taberna spirit, reworking the recipe book of a lifetime. Besides the callos a la madrileña and the rabo de toro, the house dishes include partridge, meatballs, lamb's trotters with tomato, snails, sweetbreads and suckling-pig ear, alongside the day's fresh produce such as white prawns, cockles and lobster al ajillo. The sauces are slow and gelatinous, the kind that ask for bread.
Wine and the Next Generation
Wine matters as much as the food. The list is mostly Spanish, and Trifón keeps close ties with leading growers, among them Álvaro Palacios, whom he considers family; a photograph of Trifón with his callos and Palacios's La Montesa sums up the house. His eldest son, Francisco Trifón, and the cook Iker, trained with well-known chefs, now carry the family line forward. There are two ways to eat: the lively front, where people jostle for a table for the fun of it, and a more intimate room at the back that the house likes to call its Spanish bistro.
