ŌME – Taller Gastronómico is Mexican chef Roberto Ortiz Blanco's restaurant on Calle Lombía, in the Goya barrio, which opened at the turn of 2026 billed as Madrid's first Mexican omakase bar. Ortiz, who trained in Mexico City and cooked at elBulli, Arzak, Mugaritz, The French Laundry and Punto MX, runs three formats: a short seasonal carta in the dining room, the Barra ŌMEkase counter and a Mesa del Chef tasting menu.

About ŌME
The Story
Roberto Ortiz Blanco grew up in Mexico City, trained at Ambrosia Centro Culinario there and went on to cook at elBulli, Arzak, Mugaritz, The French Laundry and Punto MX. ŌME, his 'taller gastronómico', opened at the turn of 2026, a street-level room in the Salamanca district with a discreet entrance and space for about 40. The cooking is built on three moments of Mexican food history: origin (the pre-Hispanic larder of maize, chilli, cacao, flowers, herbs and fire), encounter (the mestizo meeting of two worlds) and evolution (Mexico seen through modern technique). Ortiz says he isn't trying to reinterpret Mexico but to honour it.
The Cuisine
Contemporary Mexican, with maize and fire at its heart. In the dining room there's a short carta to share that changes with the season; at the counter, Barra ŌMEkase is a Mexican omakase built on the day's inspiration and each diner's profile; and the Mesa del Chef, a private table beside the kitchen, serves an orchestrated tasting menu. The kitchen calls it a 'carta viva', so dishes and prices shift and the current offer is shared before service.
Three Ways to Eat
Barra ŌMEkase seats you at the counter in front of Ortiz and his team for a six-course base menu at €100 a head, food only, built in real time with extra courses or supplements if you want them. The Mesa del Chef is an eight-course menu from €120 at a private table by the kitchen. The dining room works à la carte, for sharing, without the ceremony.
Booking and Cancellations
Dinner only, Tuesday to Saturday from 18:00, closed Sunday and Monday. Dining-room tables are held with a card and can be cancelled free up to 24 hours ahead (€30 a head after that); the counter and the chef's table are prepaid, with free cancellation up to 72 hours before and the full menu price charged after. The room also takes private events.
