Biography

Early years

Jorge Trifón Esteban grew up in hospitality: his father, also named Trifón, opened Mesón del Águila in Vicálvaro in 1965, and Jorge was helping behind the bar there from age five, taking on real responsibility by twelve.

Career

Trifón is self-taught, with no formal culinary-school training. In 1984 he took over his father's business and began building his own path in cooking. Through the years that followed he brought in well-known guest chefs to cook weekends at his restaurant, learning technique and knowledge from them. In 2002 he opened El Fogón de Trifón under his own name in Madrid's Salamanca district, centered on classic Spanish home cooking. The restaurant marked 20 years in 2022. His wife Marisa and their children work the restaurant alongside him, keeping it a family-run kitchen.

Philosophy

Trifón's cooking centers on slow-cooked, home-style Spanish classics, callos, rabo de toro, perdiz, albóndigas, manitas de cordero con tomate, caracoles, mollejas and oreja de cochinillo, alongside daily fresh seafood like gamba blanca, berberechos and bogavante al ajillo.
