Toma Café opened on Calle de la Palma in autumn 2011, when specialty coffee was still almost unknown in Madrid, and this first shop, Toma 1, holds a Solete in the Guía Repsol. Its founders, Patricia Alda from Madrid and Santiago Rigoni from Argentina, came from advertising, and they now roast their own single-origin coffees, lightly and without blends, so each cup shows its farm. The food is simple and good with coffee: avocado toast with poached egg, Turkish eggs, ricotta toasts, carrot cake and sponges, with vegan options. It's open every day from 08:00 to 20:00.

About Toma Café

The Story

Patricia Alda and Santiago Rigoni spent almost fifteen years in advertising before opening Toma in autumn 2011, frustrated at not finding the coffee they liked in Madrid; some people told them there was no market for it in Spain. The first shop on Calle de la Palma was tiny, and about two years later it took over the unit next door. In 2014 they began roasting their own coffee in Cuatro Caminos, in 2017 they opened Toma 2 near Plaza de Olavide in Chamberí, and in March 2020 they moved the roaster to Toma 3 + Proper Sound on Calle de Raimundo Lulio, which also works as a weekend café with natural wine and vinyl. Many baristas who trained at Toma have since opened their own specialty cafés.

The Cuisine

Coffee first. Toma buys traceable coffee from named farms and producers, roasts it light to keep its origin character, and doesn't blend different origins; each cup comes with a card explaining where it's from. The kitchen does toasts, eggs and baking to go with it, including vegan options.
