Japanese in Barcelona. Venezuelan-born, Kobe-trained sushi chef Fabiola Lairet leads a kitchen built around robata charcoal grill and precise sushi.

Background

About Robata

The Story

Robata was born on Carrer Enric Granados in 2016 and has since expanded to Madrid. The concept is rooted in the love of traditional Japanese cooking, its technique and attention to detail, fused with Mediterranean and international influences. Chef Fabiola Lairet is a Venezuelan cook who learned sushi in a Californian school from a Japanese teacher, then went to work in the sushiman's family restaurant in Kobe, Japan, making her one of the few sushi chefs in Barcelona trained in the country of origin.

The Cuisine

The menu spans sushi, sashimi, nigiri, uramaki, and robatayaki, the traditional Japanese charcoal grill technique. Highlights include Toro Soasado (€29), Wagyu A5 certified tataki (€52), Donburi de Anguila (€22), and a full range of robata brochettes from €5-10. The tasting menu 'El Viaje Robata' at €80 includes drinks and covers classics through to dessert. Bluefin tuna is a particular specialty of chef Lairet's.

The Team

Sushi chef Fabiola Lairet leads the kitchen, her Venezuelan-Californian-Japanese training gives her a unique perspective. The restaurant also has locations in Madrid, with delivery available through the Monster Sushi brand.
