Background

About Quillo Bar

The Story

Quillo Bar was founded by a group of friends who drew inspiration from the warmth, music, and dance of southern Spain. Set on Rec Comtal just off the Arc de Triomf, it serves a Spanish tapas menu with an Andalusian accent and stays open 365 days a year. The restaurant is as much about rumba and flamenco as it is about the food, with live music performances turning Thursday through Saturday nights into a loud, festive affair.

The Cuisine

The menu is built around traditional Spanish tapas and Mediterranean dishes with pronounced Andalusian touches: fritters of cod and salted fish, calamares a la andaluza, cazón en adobo, papas con choco, paellas and an arroz negro, rabo de toro, and a chuletón finished on stone. Alongside the classics, the kitchen sends out a handful of modern plates such as molletes of calamari with kimchi mayo and tuna burgers with mango mayonnaise. The carta holds steady year-round rather than shifting with market swings.

The Team

The interior was designed by Santiago Nin Klaebisch around noble materials, wood, leather, iron, and esparto, with a mural in the main dining room painted by the artist Hidalgo. The kitchen runs continuously through service, feeding both casual tapeo drop-ins and longer, louder weekend dinners.
