Los Tortillez was founded by Liad Finkelstein, an Israeli who had never cooked a tortilla before moving to Barcelona, and Vicky Martinez, his Spanish partner. They started with Tapazia in Gracia in 2019, then rebranded as Los Tortillez after pivoting during the pandemic with 'tortiguesas' (tortilla-burgers for delivery). The concept of individually sized, made-to-order tortillas with creative toppings became a phenomenon. They later opened a second location at Manso 50 in Sant Antoni. The restaurant is a pioneer of social inclusion, employing people with disabilities in front-of-house roles.

Chef Liad Finkelstein offers 16 named tortilla de patatas varieties plus a custom option, all made fresh to order at the customer's preferred doneness.
