The Story

Lomo Bajo is the casual ground-floor sister of Lomo Alto, the SB Group beef specialist on Carrer d'Aragó. Where Lomo Alto upstairs serves dry-aged chuletones at white-tablecloth prices, Lomo Bajo downstairs reworks the same meat programme into burgers, rolls and pepitos on specialty breads, bretzel, rye and brioche, designed for a quick lunch or informal dinner.

The Cuisine

The kitchen works with four categories of beef aged on different timelines: ternera (veal, around 20 days), vaca vieja (old cow, around 30 days), and buey (ox, aged 120 days and beyond, up to 365 days of extreme maturation). Those cuts are turned into rolls of cecina, steak tartar and pastrami; classic, Gorgonzola, foie, Wagyu and pulled-pork burgers on bretzel buns; and pepitos built from solomillo, aged rib, or picanya. Sides include onion rings with cane honey and mountain-cut fries.
